In a food processor, pulse together all dry ingredients. Then remove 1 cup of the mixture.
Add dates and coconut oil. pulse until well combined and sticky. Move to a bowl and stir in remaining mix.
Line an 8x8 or 9x9 pan with parchment paper. Press the sticky dough into the pan evenly.
Melt chocolate and coconut oil in the microwave, stirring every 30 seconds until smooth.
Pour melted chocolate on top of bars and spread evenly with a spatula. Sprinkle with cacao nibs and a bit of coarse sea salt. Move to the refrigerator and let set up an hour. Once set, cut bars with a sharp knife into whatever shape you like. Store leftovers in the fridge for up to a week.
