Vegan Peanut Thai Slaw

This simple recipe is makes the perfect superfood salad for summer!

Course Salad

Ingredients
  

  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 bell pepper, sliced
  • 2 scallions, sliced
  • 1/2 cup cilantro, chopped
  • 2 cups edamame, cooked and shelled

Thai Peanut Dressing

  • 1 clove garlic, minced
  • 1 tbs fresh ginger, minced
  • 1/4 cup agave, honey, or other liquid sweetener
  • 1/4 cup peanut butter
  • 2 tbs tamari
  • 1/4 cup red wine or rice vinegar
  • 1 tsp sesame oil
  • 1/4 cup olive oil

Topping

  • 1/2 cup chopped peanuts or slivered almonds

Instructions
 

  • Place all veggies and edamame in a large bowl.
  • In a food processor, blend dressing ingredients until well mixed.
  • Toss dressing with slaw. Serve topped with peanuts or almonds for crunch.
