Paleo Beef Stew with Sweet Potato + Celery Root (GF/DF/Paleo)

The weather is finally cooling off and it is the perfect time to create a big batch of this Paleo beef stew with sweet potatoes, carrots, and celery root. I love creating different versions of the classic and this one is absolutely perfect. You get the heartiness from a delicious slab of grass fed and finished chuck roast, the sweetness from the sweet potatoes, and the health benefits of all the other veggies hidden inside. Speaking of health benefits, do you know much about celery root? Celeriac (or celery root as it’s commonly called) is from the same family as celery but it’s actually a completely different plant. The edible part of the…

    Pumpkin Chai Smoothie Bowl (GF/DF/Paleo)

I had a dream about this. Not even kidding. I woke up brainstorming how to recreate the incredible Pumpkin Chai Smoothie Bowl of my dreams. And, ladies and gentleman, this is it. It’s still hot here in Arizona and this smoothie bowl is the perfect transition between summer and fall. It’s cool and comforting at the same time. When I was a kid, I used to love to go to to the local smoothie shop and order a Chai smoothie which was basically banana, yogurt and powdered chai. That was the base of my vision, but of course I wanted mine dairy free, refined sugar free, gluten free and additive free. That’s why…

Best Ever Paleo Stuffed Acorn Squash (GF/DF/Paleo)

I love fall recipes. I mean, I’m pretty much obsessed. So how did I come up with this incredible Paleo Stuffed Acorn Squash? Well, one of my favorite things to eat in the fall is paleo mock stuffing (stay tuned for the recipe). Basically, it’s stuffing without the bread. It is loaded with ground pork or sausage, onions, apples, craisins and pecans. I make it every Thanksgiving and it is always a hit! This is a faster and more simplified version, which honestly makes it even better because you don’t have to wait for a holiday to make it. In 30 minutes or less, you can have these hot and ready at your…

    Paleo Pumpkin Spice Meatballs (GF/DF/Paleo)

It’s officially fall y’all! Bring on the pumpkin spice dishes! Seriously, though this dish is calling ALL pumpkin spice fans because it’s made especially for you. I know it sounds weird to put pumpkin spice into the sauce, but its seriously like a creamy dreamy curry meatball but with more personality. I made a huge batch of these and plan to eat them all week for lunch. They are great over a simple arugula salad (as pictured) or over rice. I kinda want to make them again for a fall dinner party. They are so unique and delicious! For the meatballs, I used a combination of ground turkey and pork. I sauteed onion…

Gluten Free Apple Cider Donuts (GF)

Today is the first official day of fall and to celebrate I made a bit batch of gluten free apple cider donuts! I also diffused cinnamon and clove essential oil all day, decorated the house with pumpkins, and wore sweats even though it’s still 90 degrees. These donuts have a mildly sweet apple flavor. For a more concentrated flavor of apple, I recommend doubling the apple cider in the recipe to 2c and boiling it down to 1 cup and cooling before using (this will increase the sugar content of the donut but will also give it a stronger apple flavor). I like mine more of a mildly sweet cinnamon apple flavor so…
