Crock Pot Cranberry Orange Chicken (GF/DF/Paleo)
Anyone else starting to anticipate Thanksgiving dinner? My favorite part of Thanksgiving is this delicious cranberry orange sauce that I make to slather over my turkey slices. I am starting to see more and more bags of cranberries at the grocery store so, in the spirit of the season, I picked up a GIANT Costco sized bag. And I got to thinking… I wonder if I could make a cranberry sauce for my chicken? Well, the answer is yes. Yes I can. I present to you my Crock Pot Cranberry Orange Chicken. It’s super simple to make (throw it all in a Crock Pot simple) and it’s delicious. Thanksgiving flavors without all the…

Paleo Orange Pomegranate Salmon w Roasted Salty Brussels Sprouts (GF/DF/Paleo)
Okay you guys. This meal is incredible! The sweet + salty paleo salmon looks and feels gourmet but is actually a sheet pan dinner that only takes 30 minutes to make. What?! I know right!? I have a confession to make. I don’t like salmon. I know, I know. It’s healthy. It’s loaded in Omega-3’s which we need for our brain function. But secretly I hate it. It’s just too strong for me. That being said, I love this paleo salmon!! Why? Because the sweet tangy glaze tones down the fishiness of the salmon. Even my picky kids scarfed it up!! Now, when I choose salmon, I always go with wild caught. If…

Paleo Vegan Pumpkin Soup (GF/DF/V/Paleo)
I have been waiting to make this paleo pumpkin soup all season and I finally did. I absolutely love pumpkin soup. There is something so comforting about sitting down to a warm bowl of pureed soup when the weather cools down. I add a bit of sage to really make it feel like fall. Instead of cream or half and half for creaminess, I use coconut milk. And instead of potatoes or flour for thickener, I use cauliflower. Better yet, it only takes about 30 minutes to make and is pretty much acceptable on any dietary restrictions since it is gluten free, grain free, sugar free, vegan and autoimmune friendly. To me this…

Paleo Pumpkin Spice Fudge (GF/DF/V/Paleo)
Okay you guys. I know I have been adding pumpkin to all-the-things this fall, but this dessert is off the charts amaze-balls. What I had in mind was a pumpkin and chocolate swirl fudge and while that is not quite what it looks like, I don’t even care because the flavor is on point! This Paleo Pumpkin Spice Fudge only takes about 15 minutes to make and it’s an icebox raw vegan fudge which means there is ZERO cooking involved (virtual high five right here). Better yet, it’s loaded with a slew of secret ingredients. You know how I love to throw stuff in my recipes, right?! Well, today I am featuring UPLIFT…

Pumpkin Peanut Butter Collagen Bars (GF/DF/V/Paleo)
Throwing pumpkin into everything this fall and that includes my classic Paleo Reese’s. While the original recipe is always a hit, these pumpkin peanut butter bars are especially delicious. They have just a slight pumpkin flavor that elevates them to the next level. As a mom, I am all about throwing healthy ingredients into the things our kids love (eh hem, smoothies). Are you the same way? These babies are loaded with collagen, which not only gives them a protein boost, but is also great for their hair, skin, nails, bones and joints. But shhhhh I won’t tell if you won’t. You guys know I love to talk nutrition so let’s get a…
