Plant Based Apple Peanut Butter Tart (GF/DF/V/Paleo)
My favorite snack is apples and peanut butter so it makes perfect sense that I would come up with a paleo-ish grain free apple peanut butter tart to snack on. I bought these adorable little individual tart pans on Amazon. I was so excited about them that I had to use them as soon as they arrived! For the base, I used Nutsola Peanut Butter flavor mixed with a dash of water. You can find it here. If you don’t have Nutsola, you can make your own: In a large food processor, blend peanuts, dates, chia seeds, coconut flakes, vanilla extract and a pinch of cinnamon. You want a crumble to form so…

Fried Cinnamon Apple Bars (GF/DF/V/Paleo)
These Fried Cinnamon Apple Bars are the best snack on the plant. I’m not even kidding. They taste like apple pie in your mouth, but are actually gluten free, refined sugar free and 100% healthy! My kids and I devoured them in 5 minutes flat. First I made some vanilla almond Nutsola Bars. Nutsola is a fun blend of dates and nuts. You mix it with a little water, and then put into a mold and bake into a bar. You can purchase a bag here. If you don’t have Nutsola, you could also do the same thing with medjool dates, nuts, and vanilla bean paste. Put it in the food processor (start…

But in the name of all things fast, I decided to turn this into a one pot meal and – WOW – I’m glad I did. Not only did it save tons of time, it tastes just as delicious as when I make them separate (with only half the work). I originally adapted this recipe from an Autoimmune Paleo (AIP) apple sausage recipe during a 30 day AIP challenge I was did. It was shredded apples mixed with ground pork and cinnamon, shaped into patties and fried in coconut oil. I fell in love…

Easy Sauteed Cinnamon Apple Wreath (GF/DF/V/Paleo)
I am always looking for fun, creative and delicious snacks that my kids will actually eat. Since it’s October, and apples are in season, I thought it was the perfect opportunity to come up with a fun snack you can serve the whole family that is both nutritious and delicious. I have been really digging the apple selection at my local grocery store so I came home with a whole bunch one day and decided it was time to make something extra special when my daughter came home from school. Cue the easy sauteed apple wreath. This sauteed apple snack has ZERO ADDED SUGARS! I sauteed them in coconut oil and cinnamon which…
