I had a dream about this. Not even kidding. I woke up brainstorming how to recreate the incredible Pumpkin Chai Smoothie Bowl of my dreams. And, ladies and gentleman, this is it.

It’s still hot here in Arizona and this smoothie bowl is the perfect transition between summer and fall. It’s cool and comforting at the same time. When I was a kid, I used to love to go to to the local smoothie shop and order a Chai smoothie which was basically banana, yogurt and powdered chai. That was the base of my vision, but of course I wanted mine dairy free, refined sugar free, gluten free and additive free.

That’s why I used a powdered Chai from Blue Lotus Chai, not to be confused with the chemical and sugar laden kind from Starbucks. It’s an actual organic chai tea that is dissolvable in liquids so you don’t have to worry about steeping anything. It is also free from gluten, sweeteners, fillers, dairy, additives, and is organic and non-gmo, I used the Roobios Chai, but I am sure all of their versions are delicious.

Banana is the base. Then I added some organic mashed pumpkin for that warm fall feel. A teaspoon of powdered chai is all I needed for a good spice flavor. I also threw in 2 scoops of vanilla collagen powder for some protein and flavor (my favorite is Primal Kitchen Collagen Fuel). Last but not least, I added about 1/2 cup of light coconut milk so that it would blend in my blender. I like mine thick so I can eat it with a spoon.

Pumpkin Chai Smoothie Bowl

The perfect paleo smoothie bowl to transition from summer to fall

Ingredients
  

Smoothie

  • 2 bananas, frozen
  • 1/2 cup mashed pumpkin
  • 2 scoops vanilla collagen powder I used Primal Kitchen Collagen Fuel
  • 1 tsp powdered Chai I used Blue Lotus Chai, make sure yours is gluten, dairy, sugar and additive free
  • 1/2 cup light coconut milk more or less depending how thick you want it

Toppings

  • 1 banana, sliced
  • 1/2 cup blueberries

Instructions
 

  • Place all smoothie ingredients in a blender and blend well. Use more or less coconut milk depending how thick you want it.
  • Pour into a bowl. Top with fresh fruit and Nutsola Pumpkin Spice Superfood Mix.
