
Simple Paleo Shortbread Cookies (GF/Paleo/Vegan)
These super simple paleo shortbread cookies are made with only 5 ingredients and are absolutely delicious. The base is almond flour. Agave gives it some sweetness. Vanilla adds a bit of flavor. They are so easy and versatile, we eat them with coffee, crumble them up on smoothie bowls, or turn them into ice cream sandwiches by freezing them with a little cashew ice cream in the middle.

Paleo Shortbread Cookies
These super simple vegan + paleo shortbread cookies are a delicious and versatile treat.
Ingredients
- 2 1/2 cups almond flour
- 1/3 cup coconut oil melted
- 1/2 cup agave
- 1 tsp vanilla extract
- 1 pinch salt
Instructions
- Mix all ingredients in a bowl until well blended. Roll into a log, wrap in plastic wrap and freeze for an hour or so until firm.
- Preheat oven to 350 degrees.
- Slice cookies about 1/2 inch thick so they are in sliced rounds and place them on a baking sheet. Bake for 12-15 minutes or until golden brown at the edges. Remove cookies from baking sheet immediately to cool, otherwise they tend to stick.
