I love chicken pot pie. It’s the ultimate comfort food, am I right? Of course, it’s considered one of the unhealthiest foods in America. (No kidding, Marie Calender’s Chicken Pot Pie made #1 in the top 20 unhealthiest grocery store foods list.) This Green Goddess Detox Soup is my Monday go to, also known as my weekend-regrets-gotta-catch-up-on-my-veggies-and-stop-drinking-so-much-wine-soup. Hey, I’m not perfect. If you ask me what my favorite soup is, 9 times out of 10 I will tell you Chicken Tortilla Soup. But really, what I am referring to is the toppings. I load mine up with diced tomatoes, avocado, cilantro and fresh baked corn tortilla chips. Add a squeeze of lime and I’m in heaven! This soup looks fancy, but it’s really just a basic recipe.
