    Ruby Red Fruit Salad (GF/DF/Paleo/AIP/V)

Sometimes the most simple things are absolutely the most delicious. This simple fruit salad highlights the red fruits of the season: juicy watermelon, tangy raspberry oranges, sweet strawberries and perfectly refreshing pomegranate seeds. Have you heard the theory that nature gives you clue’s regarding the foods you eat? For example, strawberries cut in half look like teeth and they in fact have malic acid in them which naturally whitens your teeth. Or sliced carrots look like eyes and they are loaded in vitamin A which is great for your vision. Or how citrus looks like a woman’s breast, a sweet potato looks like a pancreas, grapes look like the lungs, avocado a uterus,…

    Green Goddess Detox Soup (GF/DF/V/Paleo/AIP)

This Green Goddess Detox Soup is my Monday go to, also known as my weekend-regrets-gotta-catch-up-on-my-veggies-and-stop-drinking-so-much-wine-soup. Hey, I’m not perfect. But this soup pretty much makes me feel like I am. Loaded in veggies, this tasty soup is comforting, cleansing and easy to digest. This soup was inspired and adapted by Ann Louise Gittleman’s recipe for Creamy Dreamy Watercress Soup in her book Radical Metabolism. I put my own twist on it of course, but she recommends this soup as part of her gallbladder flush 4 day plan. She highlights the importance of eating bitters to stimulate the release of bile for gallbladder health. I find myself going back to reference her book quite…

Paleo Aritchoke Spinach Dip with Twice Fried Plantains (GF/DF/V/Paleo)

I am in love with this paleo artichoke spinach dip recipe. I used cashew cream in place of mayonnaise and some nutritional yeast to give it a cheesy flavor. Instead of using chips or bread to dip it in, I made twice fried plantains which are also often called tostones in Latin America. If you haven’t tried them before, they are a MUST! The star of the show here is really the artichokes. Not only are they delicious, they are mega healthy. That’s why I added twice as many as most people do into my dip. Health Benefits of Artichokes Artichokes are part of the sunflower family and are actually a perennial thistle.…

Orange Honey Glazed Salmon with Sesame Garlic Bok Choy (GF/DF/Paleo)

Gourmet meal in 30 minutes or less? You got it! Definitely try this super simple Orange Honey Glazed Salmon with Sesame Garlic Bok Choy recipe. Here I served mine with some peas and rice, but you don’t need it if you are paleo or trying to cut down on your starches or grains. My kids really love this glaze. It’s the perfect mixture of salty, sweet and tangy. I mixed up some gluten free tamari, orange juice, honey and fresh garlic and reduce it over the stove while I prep everything else. Then pour it over the wild caught salmon and throw it in the oven for 10 minutes. Viola! The most delicious…
